EOF2 builds on the core principles introduced in the first course, guiding students toward a more hands-on and exploratory approach to life force food preparation. It thoughtfully weaves in elements of gastronomic science while encouraging a deeper appreciation for the versatility and expansive use of local native crops.

Lectures are focused on strengthening digestion through the lens of Ayurveda and includes the following concepts that will invite you to eat with more joy, ease and awareness:

• The science of delight – how to please the senses while caring for the stomach and honoring individual health needs

• The concept of digestive fire: ways to boost it, and how to avoid factors that dampen it

• How to bring comfort and health together on the same plate
